Plastic has been used as a prime source when it comes to packing. Plastic indeed is the ma¹in source for packaging food materials due to its advantages like keeping the food from getting rotten. When it comes to industries, they work continuously to ensure that plastic is used less and encourage the simplification of recycling processes.

What is SCOBY packing?

Roza Janusz prepared organic food packaging to develop innovative ideas, which can be an excellent replacement for plastic food packaging.

The name given to it is “Scoby,” which means Symbiotic Culture of Bacteria and Yeast. This is her school project in Poland at the School Form in Poznan.

The Secret Recipe was used to prepare Scoby.

From the membrane of bacteria and yeast, Scoby is prepared, which results in fermentation. To grow this membrane isn’t as difficult as it may seem to be. So the farmers can use this idea and produce on their own to make plastic-free packaging.

How did Janusz prepare?

Scoby was prepared inside a container, says Janusz; she then added agricultural waste and waited for the fermentation process for about two weeks. The mixture present in the container forms layers, the remaining liquid can be harvested. This sheet was placed on the mounds and was ready to use.

The preparation was simple, but the work is worth 100%.


The membrane is only used to pack dry or semi-dry products like seeds, salads, herbs, and sometimes instant meals. The pH value of the product decides the longevity. When Janusz produced the first protocol, it stayed edible for more than half a year.

When the membrane is freshly harvested, it can be fitted into any shape or variety of food. It is not only helpful in giving us nutrients to soil and humans but also acts as a barrier against oxygen. So the food doesn’t go in veins.

Biological tissue in packaging

It isn’t a new idea to packaging edible goods in biological tissue. Especially for dried meat, animal tissue was the material that was commonly used for packaging. Scoby is an easy and entirely vegetarian method grown by farmers which support the zero-waste movement. It enables the farm’s distribution to the supermarkets and other places where it can be bought over. To introduce Scoby to the commercial market is a big significant move.
